(Serious, non-meme post) I'm 31 years old and want a bike. I like going fast. I only have 3 grand to spend and I have no clue what to buy

I'd like it to be a crotch rocket, but one that's actually fast. I have no experience on motorcycles, but I did BMX when I was a teenager and I was fairly good at it, so I understand the physics involved with being on two wheels instead of four. I'm naturally talented so I don't think it will take long for me to get good at riding the bike and then getting my motorcycle license and then getting my hide torn off a week later.However, I am serious about this. I live in New York and I need to get the fuck out of here for a myriad of reasons, the awful weather being the greatest offender. Why do people live here? It's cold 8 months of the year and the taxes are killer! Anyway, I want to travel the country, on a crotch rocket, within a week of getting my bike license. Haha.So what's a good bike in the $3k range that will be fast and reliable enough to get me to the Pacific Northwest from Upstate NY?P.S: I have a deathwish.
