Electrical crash course?

I was kind of thrusted into a bike that has to be restored and why not make it a cafe? Also this is my first time doing bike work, but I’ve always worked in heavy industry and had to get machinery running so theres that, if it’s anything. I want to completely strip out all the electrical which is a mix of OEM and shitty aftermarket installations. Like everything, the hand controls and all that. Everything that has a wire. However I don’t even know what all I’d be ripping out and looking to replace. So if at all possible I’m looking for a list of what I’d need to buy and research to re-wire an 81’ XJ650 with new components if I were to start from scratch. As bare bones as possible.
