What are your guy's thoughts on EX500

I got a 05 ninja 500 for next to nothing and was thinking to try and do my first cafe build. So I was thinking if any of you guys had some thoughts to share. I've read the guides JimMarch has posted here and it helped to clarify a lot of details but I'm sure there are still plenty of quirks I'm unaware of. Right now I'm trying to come up with a plan for frame off full rebuild and I wasnt sure as to where to start so any advice is greatly appreciated. I would be using 43mm CBR 600 F4i front fork as the original one is bent but I think it wont be too hard to cnc a tripple tree adapter.I havent done much work on bikes but I have a good amount of experience working on engines and electronics in general and can do a decent amount of manufacturing (TIG welder, mill, lathe, 4 axis CNC) so I think I can handle a relatively complex build and certainly would love to hear some ideas as I don't have a full vision of the project in my head yet.​http://caferacertv.com/lottaworknotalotofmoney/​Here is roughly what I would want like my final build to resemble plus or minus a few details such as spoked rims, a seat large enough for two, etc. Not sure about the color or style yet but after a decade in the military I'd rather pain my bike bright pink than OD green that for sure.P.S.
