Dude hit my bike in the parking lot. Decided to settle outside of insurance (Part 2)

They are billing $2521.39 for the repairs, so the guy who hit my bike complained that it is a little high because my bike isn't worth that much but decided to call his insurance anyway.He was definitely hesitating to give me the insurance information but I got that info in the end anyway and spoke to the agent myself (from Progressive) and he gave me a claim number and told me he will give me a callback tomorrow at the end of the day.The bike shop is gonna email me a quote but I will go there tomorrow morning to get a paper copy of the quote in order to present it to his insurance in case they decide to check out the bike themselves.I'm not sure how this is gonna go down. At least I got a hold of his insurance and got a claim number. Would the insurance actually pay me that much money or would they try to be slick and give me a lower amount? How much leeway do they have to decide on a price? I've never been in this situation before and am not sure how much I will get in the end but I wanna make sure I am not being cheated out of anything, so I am bringing the paperwork from the bike shop.​EDIT: For some reason I am currently unable to respond to each of your comments but I am definitely reading them and considering your opinions. I just want to let you know I do not have my own insurance since it is not a requirement in Florida to have motorcycle insurance.EDIT 2: Users u/toslow and u/firerain recommended to research the marker value of my bike, stand my ground and even seek a lawyer in the event his insurance (Progressive) tries to lowball me for repairs.
