Track bike maintenance

So I recently came across a ex afm bike with odometer and speedo disabled . It was super cheap with decent amount of track mods to make the bike pretty worth it for the price. Previous owner said the last known miles was roughly 5k miles with regular oil changes done after 2 race days. How often do you do the other maintenance such as spark plugs, valves checks without depending on how many miles it done?
