What’d be better? Building or buying?

I’ve been really want to get a cafe racer style bike. I currently own a Harley. I’ve been seeing some cheap motorcycles on Facebook marketplace but haven’t really found any cafe racers. Should I find and buy a nicer one, fix one up, or try and build one from scratch?
