advice for someone getting into old hondas and cafe racers

i’m 19 and have really been looking into cafe racers for about a year now and was wanting to get a pre 1980 honda cb for my first bike. either a 350, 360t, 500 or 550 and was just looking for some advice on what u would think would be the best for someone who is new to riding street and is willing to work on the bike and learn without being overwhelmed. would love to here some feedback and experience via /r/CafeRacers https://www.reddit.com/r/CafeRacers/comments/g73mdk/advice_for_someone_getting_into_old_hondas_and/?utm_source=ifttt
