Need advice building my first cafe racer/motorcycle

So I recently got a job at an off road vehicle dealership that happens to sell motorcycles and fell in love with the cafe racers. Any tips on websites that have bikes I can buy and build up at my budget. This will be my first motorcycle and will be using it to drive to work do I need it to at least go 70mph and keep up with traffic if I need to go quicker.
