What to look for when building a cafe racer?

I'm looking for an ~70-80s era bike to turn into a cafe racer. I know Honda's are popular, specifically CB750's. I'm pretty new to this thing, so I'm wondering if anyone has any good suggestions for other models that will work. While I'm perusing craig's list theres lots of options, but I don't know what a "good" amount of miles is and also what constitutes a good price.
