Advice for a beginner plus some pictures

Hi all I am new to cafe racers and am looking for some advice on buying an older bike to modify. I have ridden for years and own a 2002 triumph Bonneville t100 centennial edition and want to add something to my garage that I could make modifications to and beat up. I need help finding an older bike, do I browse Craigslist endlessly or is there an easier way? I am in the DFW area and I would love to turn some wrench's soon. ThanksP.S.
