New Rider - Looking for Guidance

Hey everyone!So I recently got my motorcycle license and am looking to get my first bike. I love the idea and visuals of café racers, though I know they're usually built off of vintage bikes. So my questions to you all experienced members are:What base bike would you recommend? I'm 205lbs at 6'2" (athletic build) and am definitely looking for a smaller engine (<400cc). I was mainly looking at the Suzuki TU250x (https://roanoke.craigslist.org/mcy/d/roanoke-cafe-racer-suzuki-tu250x/6825238059.html) and some custom builds by Moto Pittsburgh (Honda CBs and Yamaha XS).What red flags should I be looking for during all this?Has anyone heard of Moto Pittsburgh? They seem to build some custom café racers for ~$4000.
