A bunch of noob questions

Getting into MotoGP after a few years of being a Formula 1 fan. Any insight appreciated!

- How do riders brake/shift when they do the leg dangle? Wouldn't they need to keep their right foot on the back brakes, or is all braking done with their hands? Do they do all their shifting/braking before hanging the leg out, or is it all simultaneous?

- Is the rear hump on a rider's suit designed for aero, safety, or both/neither? It looks like riders have very little in the way of neck protection.

- Why don't riders wear balaclavas? In F1 they're used as a fire retardant, but wouldn't the riders want something to soak up their sweat?

- F1 garages are overrun with engineers, mechanics, and data equipment, whereas the MotoGP garages look refreshingly simple in comparison. How many engineers and mechanics typically look after a rider/team at the track, and to what extent does data gathering influence a team's strategy?
