Cafe Racer build recommendations.

Hi everyone,So im looking to build a cafe racer.​What would you buy and build. My skills are limited but thats why i want the project, to improve.​Heres what ive been thinking of so far. I enjoy the yamaha brand so i was thinking xv750 with either an r1 or r6 front end and im not sure if its possible to put a single sided swing arm on the back. Also i want a good motor with parts available for a rebuild. As such I was wondering if this motor is fast or if i would need a motor swap.​Still open to suggestion tho.
