solid first bike with growth/mod potential - tu250x vs '01 cb750?


I'm looking for a bike to learn on, and from the past several hours of lurking it looks like the suzuki tu250x is *the* choice for starter bikes. My only concerns are, I'm 6ft and broad/muscular, and my girlfriend is a taller, bigger gal. I live a short highway run from downtown, and from the posts I've seen, it looks like the tu250x not as ideal for heavier loads and highway speeds. Another option I've found is, a dealership near me has a used 2001 Honda cb750, and it's slightly cheaper than a new tu250x.​Obviously if I undertake this as a hobby, buying one now then upgrading later is a given, but what else should I consider?
