Anyone here with experience on an 83’ GL650?

Hey guys. It’s my first time taking on a project like this and have a few questions that may be kind of dumb but figured I’d find the best guidance here. This first one seems to have different responses and opinions when I googled it. Is it safe to remove (already did) and leave out the coolant overflow reservoir? I live in California, if that affects answer. What’s the best digital gauge I can get? Where’s a good online shop to find fenders? (I’ve had some trouble finding smaller fenders) Can I replace my rear shock with any newer Honda CBR shocks? Thanks a lot!
