Best of both worlds: Tires.

I'm in the process building a 1979 cb750k cafe racer. I'm only 17, so I'm pretty new to the bike scene, especially building them. My tires are old and dry rotted and I need new ones. Are there any go-to tire models or companies that fit the cafe racer aesthetic without sacrificing performance?
