Beginner in need of tips!

I’ve been driving cars since I was 18 and I will now take my motorcycle license! (26y/I) I’m really into cafe racers and I’m thinking about buying a Honda CB500 or a Suzuki GS500 this summer. However, I’ve never driven one and according to family members with a motorcycle past, these machines tend to be jiggely or unstable from time to time? Does anyone here got experience of what I might expect from them? I’m I better off looking for some other type of bike? Any tips are more than helpful!
